About Trilogy

Trilogy Pizza & Wine Bistro was founded in 2003 by longtime restaurateur John Gladders, who set out to bring the best brick oven pizza in San Antonio to the Stone Oak community. Built around handcrafted New York- and Chicago-style pizzas, Trilogy quickly became a local favorite—welcoming families, friends, and neighbors for more than just a slice.

For over 20 years, John poured his heart into the restaurant, serving guests, raising his family in the area, and creating a space that felt like home. In 2025, after spanning three decades in the restaurant industry, he began a well-earned semi-retirement and passed the torch to new ownership ready to lead the next chapter.

Now under the care of Zesty Enterprises—a local veteran- and family-owned business led by Michael and Amy Knoell—Trilogy is staying rooted in what matters most while pushing things forward. We're here to deliver on a simple promise: pizza first, people always. Not just preserving the spirit of Trilogy—we're bringing it.
